I love using a cake mix to make desserts quickly! Only 5 ingredients needed for these soft-baked, chewy strawberry cookies that have perfectly crackled tops with a powdered sugar coating. They’re the prettiest pale pink color which also makes them a yummy Valentine’s Day treat.

Ingredients Needed

• Strawberry Cake Mix
• Baking Powder – This little addition of baking powder helps the cookies rise so they are thicker.
• Large Eggs – Eggs are the binder for these cookies and provide structure.
• Vegetable or Canola Oil – Oil provides moisture and fat. Either canola or vegetable oil work, I have not used any other oil. Some oils could effect the taste of the cookie (coconut, avocado, olive, etc).
• Powdered Sugar – The cookie dough balls get rolled in powdered sugar before baking. Makes them so pretty!

How To Make Strawberry Crinkle Cookies with a Cake Mix

• Prep : Preheat the oven to 375 degrees F. Line a cookie sheet (or two) with parchment paper, silpat liner, or spray it with cooking spray.
• Dry Ingredients : Add the strawberry cake mix and baking soda to a small mixing bowl. Stir with a wire whisk to combine.
• Strawberry Cookie Dough : In a separate bowl, add the eggs and oil. Beat with an electric hand mixer until combined. Add in the dry ingredients and mix with the blender until everything is combined.
• Powdered Sugar : Place the powdered sugar into a small bowl. Use a 1 tablespoon cookie dough scoop to scoop out the cookie dough and roll it into a ball. Roll the ball in the powdered sugar making sure that it is well coated.
• Bake : Bake for 8-10 minutes or until the tops have tiny cracks and the edges are pale or possibly very lightly golden brown. Allow the cookies to cool and set on the warm cookie sheet for 5 minutes. Remove them to a cooling rack to cool completely.

  • Leftovers store well at room temperature, in an airtight container, for up to 5 days.

• Can I Freeze Strawberry Cake Mix Cookies?

  • You can place the room temperature cookies into an airtight container, or freezer safe bag, and freeze for up to 3 months.
  • Allow the cookies to thaw (at room temperature) before eating.
  • If I am freezing individual cookies I like to wrap each cookie in foil and then place all the foil wrapped cookies into a gallon-size Ziploc bag and put it in the freezer. That way, when I want 1 cookie, I just have to grab one foil wrapped cookie instead of taking the entire bag out of the freezer and getting one.

• Use a Cookie Scoop : Scooping even sized cookie dough balls is so much easier when you use a cookie scoop. For this recipe you can use any size you want, but the recipe has been tested, and the nutrition information is for 1 tablespoon of cookie dough per cookie.
• Powdered Sugar Tip : It’s important to make sure the entire cookie dough ball is coated really well in the powdered sugar before baking. If there is not enough of it, the sugar will just absorb into the cookie during the bake time. If wanted, when the cookies come out of the oven and they’re warm still, sprinkle on some more powdered sugar.
• Parchment Paper : I say this every time I share a cookie recipe. Use parchment paper! I love the pre-cut parchment paper sheets because they help cookies cook more evenly, they make clean-up a breeze (you usually don’t even have to wash the cookie sheet), and they help prevent the bottoms of cookies from over browning.
